Colombia’s culinary history is puzzle-pieced together and the result is multi-generational and multi-cultural. Roughly translated to “a familial-style gathering place for a group of people to come together,” Parche envelops guests in warmth and color. The restaurant is a celebration of Colombian artisanship and culture, and both are reflected in the culinary philosophy, menu and throughout the restaurant’s lively atmosphere.
With one of the world’s most diverse populations to date, the Spanish, African, Arab, Syrian, and Lebanese cultures are just a few that have contributed to the Colombian culinary palette. With this in mind, Paul Iglesias’ goal is to transport this collective experience to the U.S. with the team’s own personal touches, including the connectivity between his Colombian roots, the food and drink, and guests. Colombian food and drink are in the midst of a transformation that Parche is trying to pioneer thanks to a determined team of first and second generation Colombians.

Parche is a treasure trove of delicious ceviches, poquitos and cocktails from Colombia. The restaurant pays homage to the culture, traditions, biodiversity, native ingredients, and terroir of Colombia while adding a modern take on Colombian cuisine. Executive Chef Juan Hormiga makes it seem effortless, though, bringing his contemporary Colombian knowledge and culinary techniques to this modern space.
The dining room is attractively decorated with hanging hand woven Balay, classic wooden tables, and bright graphics from the streets of Cali. Head to the roomy and colorful bar or lounge for a more communal dining experience. Lunch offers a nice mix of sandwiches and small bites, while dinner is squarely focused on shared plates.
Owner/Operator, Paul Iglesias (previously of Canela Bistro and Wine Bar in San Francisco) pulls from his Colombian roots and continuous travels to inspire the concept’s overarching direction. Paul has always strived to keep affordability in mind. He moves around the room showing equal hospitality to industry insiders as well as wide-eyed foodie enthusiasts.
