Once upon a time--we’re talking the Jurassic period--a sea covered a large swath of northern France. The sea is long gone, but it has left traces of itself in the soils from this period in the form of fossilized seashells. Outcroppings of these Kimmeridgian limestone soils run through the Aube in Champagne, through Chablis and the Loire, and into southern England. Is it any coincidence that the famous wine regions that sit on these soils are all famous for the minerality of their wines? We think not.
